Epi-Log: "When I asked Epi-Log readers to vote on the best pizzeria in the universe a little while back, there was only one that could match the legendary Di Fara Pizza in Brooklyn: Zachary's Chicago Pizza, of Oakland, Berkeley and San Ramon, Calif....

"I did manage to get a Q & A with LaRussa as well as nothing less than the Zachary's recipe for Chicago-style stuffed pizza."

J.P. LaRussa: "When Zachary's opened 25 years ago, the difference between "deep-dish" and "stuffed" pizza was foreign to most Bay Area locals. We do not go out of our way to differentiate, as we focus on making our product uniquely our own, truly inspired by Chicago-style pies.

"We do like to make it clear that our pizza (we typically call it "stuffed" but deep dish or deep pan works) is NOT a thick crust pizza. It is made in a 2-inch-deep pan like a pie starting with a thin layer of dough on the bottom, all of the ingredients inside, cheese, then a thin layer of dough on top which is sealed to the bottom layer. Then our chunky tomato sauce goes on top. All of the natural juices and flavors meld together in the oven creating a pizza with lots of flavor and texture."
